Grilled Chicken Festive Salad

This recipe is a family favorite.  It is healthy, colorful, tasty and easy to make.

Salad with name

It can be made as a single salad, or in a large bowl to serve several.

Ingredients:

Lettuce or Spinach or mixture of both.

I boneless chicken breast per person

1 can of mandarin oranges

sliced almonds

dried or roasted pomegranate ( I found a mixture of Roasted Pomegranate and Sliced Almonds together in a package in the salad area of a local store.)

dried cranberries

bacon bits

dressing of choice

Instructions:

1.  Marinade the chicken breasts in Italian salad dressing for 1/2 hour.

2.  Broil or grill the chicken breasts.

3. Wash and chop the lettuce or spinach and drain.  (I usually mix for the family, all spinach if just for me)

5.  Put lettuce/spinach in a bowl or on individual plates.

6.  Add mandarin oranges

7. Slice the chicken into bite size pieces.  Add to the top of salad.

8.  Sprinkle salad with sliced almonds.

9.  Add dried Cranberries and Pomegranate.

10.  Serve with the desired salad dressing and bread or rolls.
