Easy Coconut Cake

Easy Coconut Cake

I usually make this cake at Easter.   It is so light and fluffy and so moist.  The best part about the cake is it is easy to make.

If you wanted to dress it up for a baby shower or wedding shower you could add some food coloring to the frosting or coconut.

INGREDIENTS

Cool Whip
Coconut
White Cake Mix, baked as directed on box
One can of Cream of Coconut or Coconut Milk

 

INSTRUCTIONS
Bake cake as directed and let start to cool

Take a fork and poke holes in the cake

Open can of Cream of Coconut and pour 2/3’s of it over cake

Mix the remainder or Cream of Coconut with the Cool Whip

Frost the cake

Add generous portion of flaked coconut to the top.

Chill and serve!

Great on a hot day too!
